What better way to enjoy seasonal fruits than in a delicious fruit tart.  Not only does this tart taste amazing but it looks impressive and is relatively easy. Perfect for when company’s coming.

For the Crust:
1 cup all purpose flour
1/8 teaspoon salt
1/3 cup confectioners sugar
1/2 cup cold unsalted butter, cut into small chunks

For the Filling:
8 oz package cream cheese
1/3 cup powdered sugar
1 tsp vanilla
1 tsp. grated orange peel, opt’l

Seasonal fruits:
I used 1 white peach
1 kiwi
handful of blueberries
handful of strawberries, sliced
8 oz package cream cheese
1/3 cup powdered sugar
1 tsp vanilla
1 tsp. grated orange peel, opt’l
1/4 cup apricot jam or orange marmalade
1. First assemble the crust. Mix all ingredients, press into a tart pan with removable sides, prick all over and freeze covered for about 15 minutes. Bake at 425 degrees F for 13 minutes till lightly browned.

2. Make the filling. Beat all ingredients until nice and smooth. Spread into cooled crust.

3. Slice up your fruits and arrange on top of the filling in a nice pattern. I always spread warmed apricot jam or orange marmalade over the fruit to give it a nice finished sheen.

4. Top the center with a decorative mint leave.
