For traditional Eggplant Parmigiano — line your baking tray of choice with marinara sauce, and alternately layer fried eggplant slices with ricotta cheese, mozzarella cheese and sauce (ending with mozzarella). Just as you would if making a lasagna.
Bake at 350 for 30 minutes, then put under the broiler a few minutes until beautifully browned.
I used a pie plate for this round one which serves 6-8.
